The taste experience of this panettone unfolds in layers, through a carefully balanced interplay of textures and temperatures. At its heart lies a Don Carlo dark chocolate ganache: a soft, enveloping mixture with a creamy texture that enhances the liqueur’s alcoholic and spicy notes, leaving a long-lasting, lingering sensation on the palate.

On the outside, the dark chocolate coating forms a thin, crisp crust, punctuated by chopped cocoa beans that add a textural, almost tactile element, providing a contrast to the soft interior. The bite is thus full of texture: first the crisp snap of the shell, then the softness of the filling, and finally the melt of the ganache.

The flavour profile is complex yet distinct: cocoa dominates on the palate, followed by a progression of herbaceous and spicy notes, with hints of clove and a citrusy freshness that lightens the body. The sweetness is well-balanced, never excessive, giving way to a clean, slightly bitter finish.

This panettone bridges the gap between patisserie and gastronomy, designed to be savoured thoughtfully, with each element serving a specific and distinct purpose
